Crispy Garbanzo Patties

Despite not being fried, these biscuit like patties are crispy and have a soft, creamy interior. I consider these a mesh between Falafel and a chickpea burger!

They turned out so much better than I could have imagined and are quite addicting. The exterior really crisps up, but the interior stays soft with a texture similar to hummus. They were great on their own, or use them as a side item!

Easy Gluten Free Italian Dinner

If you grew up anything like I did, it was football and Italian food on Sunday’s. It was something I always looked forward to growing up and something I still hold dear to my heart Even though I live 3,000 miles away from my family back in Virginia Beach, I try my best to keep the tradition alive.

My step-dad is Italian, and an amazing cook! The recipe I’m about to share with you is a twist on his ‘Spaghetti and Turkey Meatballs” recipe. Mine is much simpler to make, a tad bit healthier (sorry Dad) and very healthy/yummy!

This recipe’s quite easy to make and everything I got comes from Trader Joe’s. This is my simple “cheat” recipe, meaning it’s a lot of items that’re already pre-made from Trader Joe’s . . but hey, that’s what Sunday’s are all about, right?! J

This meals serves 4 – 5 people at less than $15, total! Yes, you heard that right!

This meal was inspired by my friend Kelly, who’s a fun loving vegan! Last Sunday, we watched the Super Moon together and cooked this delicious meal! I tried it and knew right away I had to make it for myself . . you’ll know once you try it, trust me!

It may look like there’re a lot of components to this, but I can promise you this meal is really easy to make. Oh, and did I mention how it feeds 4 – 5 people (depending on serving size) for only $11 for the entire meal! AMAZING!

It may not look it from the the image, but this recipe’s so simple to make + inexpensive! This salad is healthy and so easy to assemble. It’s great for either lunch or dinner, or anything else and it tastes SO good!

It cost me less than about $15 to buy everything at Sprouts and it serves about 5 people/servings!  *Add meat or tofu on top for some extra variety and protein!
