These muffins are SO easy to make in advance and are perfect for either on-the-go mornings or as a pre-workout snack!

You guessed it . . they’re so much healthier than those regular muffins and these are full of protein! You can for sure make these ahead of time, as this recipe makes about 20 small muffins and they’re only 31 calories a piece! It look me about 10 minutes to prep, 20 to cook and costs about $5!

You can then microwave for about 30 seconds and enjoy later as well!

Despite not being fried, these biscuit like patties are crispy and have a soft, creamy interior. I consider these a mesh between Falafel and a chickpea burger!

They turned out so much better than I could have imagined and are quite addicting. The exterior really crisps up, but the interior stays soft with a texture similar to hummus. They were great on their own, or use them as a side item!

If you grew up anything like I did, it was football and Italian food on Sunday’s. It was something I always looked forward to growing up and something I still hold dear to my heart Even though I live 3,000 miles away from my family back in Virginia Beach, I try my best to keep the tradition alive.

My step-dad is Italian, and an amazing cook! The recipe I’m about to share with you is a twist on his ‘Spaghetti and Turkey Meatballs” recipe. Mine is much simpler to make, a tad bit healthier (sorry Dad) and very healthy/yummy!

This recipe’s quite easy to make and everything I got comes from Trader Joe’s. This is my simple “cheat” recipe, meaning it’s a lot of items that’re already pre-made from Trader Joe’s . . but hey, that’s what Sunday’s are all about, right?! J

This meals serves 4 – 5 people at less than $15, total! Yes, you heard that right!

These sweet potato biscuits are gluten free + vegan! They’re easy to assemble and tastes so good!

I made, baked and ate them all within an hour – so they’re quick! Also, all the ingredients combined cost me less than $15! I mostly had everything in my home already, since I use those ingredients so much though!
