Vanilla Protein Bars

I’m always searching for creative healthy ways of revamping my snacks before the gym, or even healthy gluten free dessert ideas. I came up with this recipe, and let me tell you, it’s one you won’t want to miss!

These bars are made with MRM Vanilla All Natural Veggie Protein, which is the only brand I use for any protein supplements!

They’re packed with a ton of healthy Protein, are gluten free and super easy to make!

Ingredients:

Bars:

  • 2 scoops of MRM All Natural Veggie Based Vanilla Protein
  • 2 eggs
  • 1/4 cup light agave nectar
  • 1/4 cup virgin coconut oil
  • 1 tablespoon of vanilla extract
  • 1-2 teaspoon(s) of cinnamon
  • 1 teaspoon of nutmeg
  • 1 teaspoon of baking soda
  • 1/4 cup of gluten free flour (I use Glutino’s) *optional but makes for a more cake like texture
  • 3-4 packets of Stevia (optional but I like these sweeter)
  • Sprinkle of salt

Icing:

  • 1 cup of 0% non-fat Greek yogurt
  • 2 packets of stevia
  • 1 tablespoon of cinnamon
  • 1 teaspoon of nutmeg

Directions:

  1. Combine all of the cake ingredients in a mixing bowl and mix until a batter like consistency
  2. Pour into a 8×8 pan that’s been sprayed with non-stick cooking spray
  3. Bake at 350 for 20 minutes
  4. Take out and let cool
  5. Mix the icing ingredients together
  6. Add the icing to the top and then top with cinnamon
  7. Cut into even squares and store in fridge for the week

Enjoy! They will even be okay on the counter at room temperature. 🙂
