Gluten Free Oat Bars

This’s a great recipe to make this upcoming weekend! Wake up, make your self a cup of coffee and cook up these bars!

Sounds like a great Saturday morning to me! These bars took about an hour to prepare & make. Costs less than $8, because I had most of the ingredients already in my home!

Serves 6 – 7 people 🙂

Ingredients:

  • 3/4 cup + 2 tbsp gluten free flour (divided)
  • 1 + 1/4 cups light brown sugar (divided)
  • 2 cups gluten free oats (Trader Joe’s)
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 3/4 cup cup + 1 tbsp butter (divided)
  • 3 cups blueberries
  • 1 tsp cinnamon

Directions:

  1. Preheat the oven to 350 degrees
  2. Combine 3/4 cup gluten free flour, 1 cup light brown sugar, oats, baking powder and sea salt together in a large bowl
  3. Add 3/4 cup butter (cold & cubed) and mix with your hands to form a crumbly mixture
  4. Press the mixture into a buttered 9 x 13 baking dish
  5. Spread the blueberries over the top and press them into the mixture a bit
  6. Combine the remaining 2 tbsp flour, 1/4 cup brown sugar and cinnamon in a small bowl
  7. Add the remaining 1 tbsp butter, mix into a course crumble and sprinkle over the blueberries
  8. Bake for 45-50 minutes
  9. Allow to cool at least 30 minutes before slicing into bars
