Vegan Berry Ice Cream

If you are looking for a new way to use up your frozen fruit and stay cool on these hot summer days, try this two-Ingredient ‘nice’ cream. The recipe is so simple to make and no one will ever know there are only two ingredients involved.

I love that this Ice Cream is healthy too! I’m going to be dishing up this ice cream all year long! 🙂

Frozen Berries


  • 1 bag of frozen strawberries
  • 1 bag of frozen blueberries
  • 2 tablespoons maple syrup
  • 1 cup fresh strawberries


  1. Take the frozen berries out of the freezer and place in a blender
  2. Puree until the mixture is creamy and smooth. Add the maple syrup and puree to combine
  3. Take a spring form pan and line with the fresh strawberries, cut in halves
  4. Next, pour the ice cream into the large spring form pan
  5. Serve immediately for soft-serve ice cream consistency. If you prefer harder ice cream, place in the freezer for a few hours and then serve
  6. If you have a hard time creating a creamy consistency, add 1-2 tablespoons of almond milk
