Thai Salad

It may not look it from the the image, but this recipe’s so simple to make + inexpensive! This salad is healthy and so easy to assemble. It’s great for either lunch or dinner, or anything else and it tastes SO good!

It cost me less than about $15 to buy everything at Sprouts and it serves about 5 people/servings!  *Add meat or tofu on top for some extra variety and protein!

Ingredients: 

Dressing:

  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 2 tsp honey or agave
  • 1 tsp sesame oil
  • 4 tsp’s of crushed garlic (click for what I used)
  • 1/2 cup vegetable oil
    • Optional:
      • 1 tsp chile garlic sauce
Salad: 
  • 1 head of purple cabbage, thinly sliced
  • 1 large bundle of lettuce leaves
  • 4 mandarin oranges
  • 3 carrots, grated in to thin slices
  • 1 red bell pepper, diced into small pieces
  • 1/2 cup chopped cilantro leaves
  • 1/4 cup scallions
  • 1 cup unsalted dry roasted peanuts, chopped
  • Optional:
    • Gluten free crunchy ramen

Directions:

  1. In a small bowl or jar, mix all of the dressing ingredients except the oil
  2. Add the oil and mix or shake until fully emulsified when ready to serve
  3. Refrigerate until ready to use – it’ll last up to 5 days or so
  4. Cut up the cabbage and all of the other veggies
  5. In a large bowl, mix all of the salad ingredient items and toss together (hands work best)
  6. Add enough dressing to moisten and toss when ready to serve
  7. Add the peanuts on top

That’s it! You can also add grilled chicken or any other meat of choice! It’s that simple and tastes amazing!
